If you are planning to bake cookies this Christmas I’m leaving you here some inspiration for a beautiful cookie box. I used a versatile dough, made various flavors out of it and gave the cookies different shapes, you can choose any filling you like, different jams, dulce de leche, chocolate, hazelnut cream and so on.

Ingredients for the Christmas cookie box:

200g unsalted butter at room temperature
200g sugar
2 eggs
200g almond flour
400g flour 000 type
1 tsp baking powder
1 tsp cinnamon
30 g cocoa
1 tsp orange extract or zest of one organic orange
1 tsp ginger powder
1 tsp vanilla extract

Mix the almond flour with the flour 000 type, baking powder and cinnamon in a bowl. Split the mixture like this: put 250g of it in a bowl and mix it with the cocoa, leaving the rest of 350g aside. In a separate bowl mix the butter and sugar on medium speed until fluffy, then add one egg at a time and mix. Divide the butter mixture in half in two separate bowls, in one bowl add the mixture with cocoa and add over it orange extract or orange zest and mix, in the other bowl add the almond flour mixture (the one without cocoa) and add over it vanilla extract and ginger powder and mix.

Fold each dough, shape it into a flat disc, wrap it in cling film, and put it in the fridge for a few hours or even overnight. Once you are ready to bake take it out of the fridge and leave it at room temperature for 30 min. Roll it on a floured surface and work in small batches, is better to divide each dough in half. Preheat the oven at 175 degrees Celsius, shape the cookies as you like, it’s nice to cut out tiny shapes inside like stars, bake them for 10-12 and let them cool on a rack. Put jam, dulce de leche, chocolate or anything you like between them, you can sprinkle them with powdered sugar for a snowy look. Enjoy!
