Ingredients Savory Cheese Sticks:

200 g sheep cheese (plus an extra 100 g of cheese – can be a mix: hard cheese, cheddar, even parmesan)

100 g full-fat sour cream (at least 25–30% fat)

100 g duck fat (or pork lard)

1 egg (for the dough) + 1 egg for brushing (egg wash)

½ tsp sweet paprika

½ tsp dried thyme

Salt and pepper, to taste

225 g white flour (type 650 or all-purpose)

Toppings of choice: sesame seeds, poppy seeds, paprika, thyme, caraway seeds, grated cheese or parmesan

In a bowl, combine the cheeses, sour cream, duck fat, 1 egg, paprika, thyme, salt, and pepper.Gradually add the flour in batches (about 100 g at a time) until a smooth dough forms. Wrap the dough and let it rest in the fridge for 30 minutes. Divide the dough in two. Roll out each piece into a rectangle about 30 x 25 cm.Cut into thin strips to form sticks. Brush with beaten egg (egg wash). Sprinkle your choice of toppings: seeds, herbs, extra cheese, etc.Bake at 180°C (350°F) for 15–20 minutes, until golden.
