This walnut and apple cake is just perfect for this season and super easy to make. This time I made this recipe in the garden and had the best assistant, Mr. Simba, he is such an adorable cat. I also tested some new gadgets from Kicthenshop, my new KitchenAid Go Cordless hand mixer and food chopper, both cable free which allow you to cook anywhere and move freely in the kitchen. Ingredients walnut and apple cake:
150g flour
50g walnuts grounded
1 and 1/2 tsp baking powder
2 tsp cinnamon
1/2 grated nutmeg
3 eggs
150g sugar
2 medium apples
100g butter
100g milk
2 tbsp almond flakes
Preheat the oven to 170 Celsius. Melt the butter on low heat, you will get a better taste if you turn it into beurre noisette, just leave the butter on low heat for a few extra minutes until it turns bright brown, and make sure to keep an eye on it. Strain it, let it cool down then mix it with the milk. Mix the dry ingredients flour, cinnamon, baking powder, and nutmeg. Beat the butter with the eggs until light and fluffy.
Mix the butter mixture with the flour and egg mixture. Peel and core the apples, dice them then squeeze a bit of lemon juice over and sprinkle a bit of flour over and mix. Add the apples and the grounded walnuts to the cake batter and fold, pour the mixture into a 27cm prepared tin greased with butter and dusted with flour and bake the cake for 30-40 min or until a toothpick comes out clean. Have this lovely walnut and apple cake it warm with some vanilla ice cream on top and caramel sauce.
